The fermentation process uses selected yeasts, and the extraction is defined over the course of the process. In general, the pump overs are more intense at the start of fermentation and are reduced towards the halfway point or end of the process. The post-fermentation maceration time is defined for each individual cask, varying from just a few hours up to ten days after the fermentation process has ended. The wine is aged in contact with 40% French Oak and 60% American Oak for a period of eight months.
Winemaker's Comment:
A ruby red coloured wine with good intensity. The bouquet is dominated by fresh and ripened red fruit with spiced nuances coming from the wood barrels the wine is aged in. It is a medium-bodied and smooth balanced wine with an acidity that offers a refreshing surprise. This wine has a long-lasting and enjoyable finish.
