Valley: Casablanca - Ageing: 2 - 3 years
Harvest
20% of the grapes are cold macerated for 18 hours at temperatures below 5°C. The rest are crushed and pressed immediately. Free-run and low presses are used to produce the Reserve level in order to preserve the maximum fruit concentration and balanced acidity levels. Destemmed grape must is fermented at a low temperature (13-14°C) to allow the fruit’s flavours to develop and to then be be retained. The lees are worked on before proceeding with the clarification process.
Winemaker's Comment:
A bright yellow colour with hints of green. Its intense aromas are a mixture of citrics and passion fruit, with light herbal base notes that are typical of this variety. It is intense on the palate, with an enjoyable acidity that emphasises its freshness, solid structure, and long-lasting finish.
