• Mediterranean climate, cloudy, strongly influenced by its proximity to the Pacific Ocean (14 km).
• The sea acts as a buffer, providing lower maximum temperatures and higher minimum temperatures.
• The soil is primarily granite based and can vary, ranging from pure weathered granite to decomposed granite soil.

Harvest
The grapes are harvested in mid-March. 10% of the whole bunches and the uncrushed grapes are cold macerated for one week and then fermented at 28°C, with a high temperature of 32°C towards the first third of the fermentation process, with a soft extraction. After post-fermentation maceration, the wine is separated from its pomace and immediately decanted for 24-hours before being transferred to barrels to ensure a solid structure and colour setting. The wine spends 15 months in second-use French Oak barrels.
Winemaker's Comment:
Deep and intense ruby red colour. This wine has a rich varietal character dominated by strawberry, cherry and spiced aromas delicately combined with toasted and vanilla nuances. Elegant and intense, its has some earthy notes that add complexity to the wine’s berry fruit characteristics. It has a solid and sweet backbone, with a lingering finish that enhances the fruitiness of this variety.
