Harvest
The grapes are harvested early in the morning in 10 kg boxes and then taken to the cellar in refrigerated trucks. Once in the cellar, 100% (80% in barrels – 20% in stainless steel casks) of the grapes are put on to a sorting table prior to pressing. The juice produced is cold decanted for 12 hours and the thick lees is then racked off and seperated from the must. The fermentation is started in stainless steel casks and then continues in the barrels. 35% of the must is fermented with native yeast and 65% with selected yeast. Once the fermentation process is complete, the wine is stored in barrels with a weekly battonage, twice a week at first and then reduced down to just once a week later on, for a period of nine months.
Winemaker's Comment:
A bright greenish yellow colour. An intense and complex bouquet that combines mineral, light citrus, nectarine, and floral nuances. On the palate the wine is refreshing and well-balanced, with a good body, silky texture and depth.
