Harvest
Harvested at the end of April, the grapes are destemmed, partially crushed, and cold macerated for seven days prior to fermentation. They are then inoculated with selected yeasts, and the fermentation takes place at 25°C–28°C. Delestage is performed once a day during the first two-thirds of the fermentation process with short pump overs at the end of process to ensure a balanced wine upon extraction. A 20-day post-fermentation maceration process is carried out to develop the well-rounded sweetness that this wine is known for.
Winemaker's Comment:
Deep and intense ruby red colour. It has a complex bouquet of fresh dark fruit and spiced tones that are typical of this variety, elegantly complimenting the nuances of chocolate and vanilla which are achieved through the wood. It is powerful and intense with elegance and depth, resulting in a flavoursome wine that is longlasting on the palate.
