Harvest
The grapes are carefully crushed (leaving some whole berries intact after crushing). The temperature is increased to 15°C prior to inoculation with selected yeasts. At the start of the fermentation process the temperature is increased to 28°C. The extraction process uses the delestage technique, performed twice a day throughout the entire fermentation process. Once the fermentation is complete, the post-fermentation maceration process begins for some selected casks of wine. Part of this wine is immediately transferred to barrels for the malolactic fermentation process, while the remaining wine goes through the same process in stainless steel casks before being transferred to barrels. The wine is then left after the second transfer.
Winemaker's Comment:
Deep and intense ruby red colour. A bouquet of black fruits combining blackcurrants, blueberries, and blackberries with dried figs, tobacco, and spiced nuances. Its intense body offers well-rounded ripened tannins that create a strong backbone leading the wine on to a long, lingering finish.
