Harvest
The fermentation is made with selected yeasts and the extraction is defined over the course of this process. There are intense pump overs at the start of the fermentation process which are then reduced halfway through, or at the end of said process. The post-fermentation maceration duration is defined for each individual cask, varying from just a few hours to 10 days after the process. Over the ageing process, 60% is in contact with American Oak and 40% with French Oak for a period of eight months.
Winemaker's Comment:
A deep purply red coloured wine with expressive aromas of dark fruits accompanied with roasted, mocha flavoured nuances. On the palate it has a good volume and structure, with a long-lasting and fresh finish.
