Reserva / Sauvignon Blanc

Ageing: 2 - 3 years.
20% of the grapes are cold macerated for 18 hours at temperatures below 5°C. The rest are crushed and pressed immediately. Free-run and low presses are used to produce the Reserve level in order to preserve the maximum fruit concentration and a good acidity balance. Destemmed grape must is fermented at a low temperature (13-14°C) to allow the fruit to develop and to be retained. The lees are put through a fining process before being put through the clarification process.
A brightly yellow coloured wine with shades of green. Its intense aromas are a mixture of citric and passion fruits, with a slightly herbal base which is typical of this variety. It is concentrated on the palate, with a pleasant acidity that supports its freshness, firm structure and long persistence.- BUY -
