Harvest:
Harvested by hand during the month of April, the grapes are destemmed, crushed and cold macerated for five days in order to extract as much colour as possible without an excessive amount of tannin extraction. The fermentation process is at a temperature of between 24°C and 28°C, depending on each batch and area. 10% of wood is used during the fermentation to increase the intensity of the colour and the balance of the wines. Once the alcoholic fermentation process has finished, 20% of the wine is aged in French wood for eight months to sweeten and to increase in complexity.
Winemaker’s comment:
This Malbec is an intense violet colour with aromas of red and dark fruits. Its pleasant sitting on the palate, with good volume and soft tannins support its elegant structure and persistent finish. They help to make an excellent wine that can accompany any moment.
