Ageing: 7 - 9 years.
Fermentation takes place with selected yeasts and the extraction level is defined as fermentation progresses. The pump overs are generally more intense at the start of the process and reduced towards the halfway point or end. The temperature is controlled to remain below 28° C, with a slight decrease in temperature at the end of fermentation to keep the fruitiness. The wine is racked and decanted and put in barrels for its malolactic fermentation and maturation.
Intense ruby red in colour with a bouquet dominated by dark fresh ripened fruits such as blueberries, blackcurrants and red fruits like strawberries, with certain spiced notes associated with the wood in which it is aged. Medium-bodied, very silky, and well-balanced with good acidity that lends a fresh sensation that is powerful and concentrated. Long and pleasing on the finish.- BUY -
