Gran Reserva / Carmenere
Ageing: 4 - 5 years.
The grapes are picked at the end of April, destemmed, partially crushed, and cold macerated for seven days prior to fermentation. It is inoculated with selected yeasts, and the fermentation takes place at 25°C–28°C. Delestage is performed once a day during the first two-thirds of the process and there are then short pump overs at the end of fermentation in order to obtain a balanced wine. A 20-day post-fermentation maceration process is carried out to develop the well-rounded sweetness that characterizes this wine.
Deep and intense ruby red colour. It has a complex bouquet that combines fresh dark fruit and spiced tones that are typical of the variety. These elegantly compliment the hints of chocolate and vanilla which are achieved through the wood. It is powerful and concentrated while not lacking elegance and deepness, it is a tasty and long-lasting wine.- BUY -
