Ageing: The wine was aged for 12 months in old barrels
Harvest:
THE GRAPES ARE GENTLY DESTEMMED AND CRUSHED, LEAVING SOME BERRIES INTACT WHEN FERMENTING. THE TEMPERATURE IS RAISED TO 15°C (59°F) PRIOR TO THE INOCULATION WITH SELECTED YEASTS, IT IS THEN RAISED TO 28°C DURING THE FIRST STAGES OF THE FERMENTATION PROCESS. OPEN PUMP OVERS ARE MADE TWICE A DAY THROUGHOUT THE PROCESS TO IMPROVE THE EXTRACTION. ONCE THE FERMENTATION HAS ENDED, SOME OF THE SELECTED STEM HEADS GO THROUGH A POST-FERMENTATION MACERATION PROCESS FOR AN IMPROVED TANNIN TEXTURE AND SOFTNESS.
Winemaker’s comment:
OUR MEDALLA REAL GOLD MEDAL WINE HAS A VERY DEEP PURPLE INK COLOUR. THE NOSE IS RICH AND FULL OF DARK FRUIT SUCH AS BLUEBERRIES, BLACKBERRIES, DRIED FIGS AND SOME SOFTLY SPICED NOTES. THE WINE HAS A SWEET ATTACH AND A RICH MEDIUM PALATE. IN THE MOUTH IT PRESENTS RIPE AND ROUNDED TANNINS THAT CREATE THE BACKBONE OF THE WINE LEADING TO A LONG, CREAMY, DARK FRUIT FINISH.
