Gran Reserva / Pinot Noir
Ageing: 2 - 3 years.
The grapes are harvested in mid-March. 10% whole clusters and the uncrushed grapes are cold macerated for one week and then fermented at 28° C, with a temperature peak of 32°C towards the first third of the fermentation process, with a soft extraction. After post-fermentation maceration, the wine is separated from its pomace and immediately decanted for 24-hours before being transferred to barrels so as to ensure proper structuring and colour setting. It also spends 15 months in second-use French Oak barrels.
Intense, deep, ruby red colour, with a rich varietal character dominated by strawberry, cherry and spiced aromas delicately combined with notes of toast and vanilla. Elegant and well concentrated, with some earthy tones to add complexity to the berry fruit characteristics. It has a firm backbone and a sweet, lingering finish that enhances the fruit development in this variety.- BUY -
