Gran Reserva / Chardonnay

Ageing: 3 - 5 years.
The grapes are harvested early in the morning in 10 Kg. boxes and then taken to the cellar in refrigerated trucks. Once in the cellar, 100% (80% in barrels – 20% in stainless steel tanks) of the grapes go through a sorting table prior to pressing. The juice obtained is cold decanted for 12 hours and then racked of the coarse lees. The fermentation starts in stainless steel tanks and then continues in the barrels. 35 % of the must is fermented with native yeast and 65% with selected yeast. Once the fermentation is complete, the wine remains in the barrels for 9 months with weekly battonage, twice a week at first and then just once a week later on.
Bright, greenish-yellow in colour. Intense and complex bouquet that combines mineral notes with light citrus, nectarine and flower flavours. On the palate the wine is refreshing and well-balanced, with a good weight, silky texture, and depth.- BUY -

Ideal to be drank on its own or with grilled scallops, roast aubergines, pastas and soft cheeses.
